forage sorghum hay

Planted a 120 day milo cover crop on 7/1 on prevented planting acres and can only hay or graze after Nov 1. As of 10/20 have not had a killing frost and plants are tall and green and seed heads are turning brown. If on 11/1 we have still not had a killing frost, should I wait for a killing frost before swathing for hay; for the sole purpose of expediting dry down so as to get baled in a timely manner? If I can't get it baled, I plan to windrow graze through the winter.
