My pumpkin vines have started to die off and I am wondering if I can/should harvest before they are ripe.

Pumpkins need some time to cure, and can be left in the field or garden until they finish ripening. Even some larger green ones will do a bit more maturing if left to cure.
If you decide to harvest them now you still need to let them sit out in the sun - without touching each other - for a time.
