Canning salt

Asked August 28, 2015, 1:34 PM EDT

I forgot canning salt in stewed tomatoes. Am I okay yet or should they be consumed soon?

The good news is that in canning (unlike some other forms of preservation), salt is for flavor not for safety/preservation. So it is ok, that you left the salt out! Just one word of advice when using salt during canning is to make sure you use pickling salt. Regular table salt has an ingredient to prevent it from caking, but it can make your canned items cloudy (which is an indicator of bacterial growth). So, don't use regular table salt when canning. If you have further questions, you can contact your local Extension office or check out http://homefoodpreservation.com or http://nchfp.uga.edu/ both which lead you to the National Center for Home Food Preservation.
