Fall school garden

I am a University of Maryland student who will be working at a District of Columbia school to garden with primary school kids this fall and wondered what advice I can get about what plants I should try with the kids if school starts at the end of August? Should I start some seeds before class starts and transplant with the kids? Can I talk to someone about ideas and advice?
