How long will wild hog meat keep?

My son killed a wild hog at 5 a.m. He has it in a bathtub in cold water and it is now 10 a.m. How long will the meat keep? It has already been quartered.

You need to process it immediately. The water needs to be at least refrigerator temperature (34-40 degrees F) in order for the meat to be safe. Unless you're adding ice on a regular basis, the water probably isn't at this temp. The body heat that remains in the meat will also raise the temp. Be sure to use a thermometer so you can be sure of the temp.
