my newly planted cherry trees have had the limbs completely eaten off by deer, will they survive?

Well, it's hard to know if they will survive or not. The tree may put on new shoots at the nodes, but it does need 25% of it's leaves to photosynthesize (produce food/energy), so without leaves, it may not be able to survive. But, you may notice new buds or shoots in a few weeks, so I would wait it out and see what happens. In the mean time, erect a barrier around your young trees. Use woven wire or chicken wire with steel posts or electric fence posts, or this will continue to happen.
