Maturity in grapes (sugar content, acid content, color, flavor, etc) is mostly determined by the genotype (variety) and crop load management. However, sunlight exposure on the fruit can improve color, flavor, aroma, and increase sugar levels. Sunlight exposure is improved proactively by proper training and appropriate vine spacing, and remedially by canopy management practices of shoot positioning and leaf removal.
