I'm not sure what you are asking.
How do you know they are edible (can be eaten) and edible by what? People? Animals? You indicate that they are growing in turf... like a lawn. They are weeds in a lawn so I am not sure why you want to eat them.
It is very difficult to identify plants when they are horizontal and not vertical like they grow. There is no scale so I can't guess how tall these are.
If you cut off whatever is there, it will not become larger. It is what it is.
Best guesses: with what is available:
1. Looks like: orache... there about a dozen kinds all looking similar
2. Looks like some kind of wild lettuce
3. Looks like: large rough hawksbeard
If you are eating plants without knowing what they are, this is very risky.
