Homemade mustard is not a "make and immediately eat" food. It takes time for the flavors to properly meld and settle down. If you taste it right after you mix it up, the fresh mixture will probably be bitter and unpleasant. Recommendations vary from two days to two weeks for the flavors to mellow. Though mustard has many anti-bacterial properties, it is best to age mustard in the frig.
