Fertilizing shade trees is only recommended when the trees have been planted on very infertile soil. It would be worth getting your soil tested to see if your soil has what it needs. Over-fertilizing can lead to greater insect damage and weaker growth. I don't know if it would affect fruit production dramatically one way or the other.
