frozen dried tomato is black
Some of my frozen dehydrated tomatoes have developed a black edge. They were frozen in plastic freezer zip bags. I put them in the freezer bags as soon as they cooled. Then into the freezer. What could cause this? Are they safe to eat? PS: I didn't vacuum the bags. Only a small portion of the tomatoes had this black on the edges.
This is an enzyme reaction that often happens with dried tomatoes especially towards the end of the season. They are safe to eat. It you want to prevent it, you can heat the tomatoes before drying to kill the enzymes. You probably won't notice the black when you rehydrdate them and use them in cooking. It is not a safety issue.
