Generally speaking it is not a good idea to remove roots from plants unless they are diseased or damaged. If the roots of your Amaryllis are healthy leave them alone. They are the food production and storage engine of your plant especially while it is growing new leaves. Make sure that you do not crowd the roots when you repot it.
