Bottling sauce for sale in Texas

I'm developing sauces (ranging from ranches to curries to chipotle sauces) and need some help understanding what resources would best help guide me on regulations in Texas for bottling your own small batches of sauces and selling them as well as resources on equipment and bottling/prep steps necessary for keeping this range of sauces safe to the public and the shelf lives that I can expect for different type of sauces.
