Soup from Scratch

Hi Experts, I have a lot of my adult students asking for a chicken/turkey soup recipe that is completely *from scratch*. They'd like to learn how to make broth from the leftover (whole) roasted chicken or turkey. Is there a food hero recipe or tip that tells how to do this? (I've searched, and can't find one). It's especially pressing this time of year, with the holiday turkey season approaching. Thanks for your assistance, Killer Tomato
