Adding peppers to a jelly recipe
I'm looking for a recipe for muscadine pepper jelly. I made it last year. I know myself--I would have only used a recipe that I trusted.
I'm able to find the Mayhaw pepper recipe from the LSUAgCenter.
Is there a safe formula for adding peppers to any jelly? a juice to pepper to vinegar ratio? If I use dried red pepper flakes, do I have to add vinegar?

Yes, the Mayhaw Pepper recipe should be close or there is a recipe on the Clemson Extension site for Pepper jelly (http://www.clemson.edu/extension/hgic/food/food_safety/preservation/hgic3200.html.
Ball also has a recipe for Jalapeno Jelly.
You would need to keep the vinegar in there at the right ratio for proper acidification.
