Do I need a water bath to seal? Will it change the pickles' texture?
I have a recipe that calls for commercially prepared Kosher dills. The jar says refrigerate after opening. They are reseasoned and sweetened. My friend doesn't seal them or refrigerate them. I love the new flavor but am a little worried about storing. Do they need a water bath to seal, and will it change the texture?
We recommend you refrigerate the jar soon after it cools to room temperature. Of course, since it isn't sealed, it won't last forever even in the fridge, so just treat it as you would any other fresh food. If you do this, you do not need to seal them in a water bath.
