I would like to know if it is safe to cut out animal bites in fruit eg. apples , plums Peaches Pears from our yards, and still eat fresh / cook the fruit?

There's some risk involved, but you can minimize it by washing the fruit well. Then use a clean knife to excise the damaged portion along with another 10-15% adjacent to the damaged portion. Wash the knife before using it again on another fruit.

Risk is further reduced by cooking fruits after excising damaged area...to process into jam, jelly, syrup, cobbler etc.
