We have a Honeycrisp apple tree, about 8 years old. It is lopsided with more apples on one side than the other. Should we cut off the branches that have a large amount of apples on them?

Do not cut off branches. The blossoms on one side must have been pollinated more than those on the other side. Your tree will be just fine. Next year there will be fewer apples as Honeycrisp naturally produce more every other year.
