what percentage of extra vegetables should I plant to save seed for the next year?

Two plants of each kind should provide more than an adequate supply.

Oh my, I need to make a correction:
In most cases, you won't need any extra plants. For instance, with tomatoes, you only need to allow several tomatoes to become fully ripe.
