% meat from a live weight bull

If one buys a bull and only knows its current standing or live weight... what percent of meat can one expect from the bull if slaughtered for meat? What percent will be bone? What percent will the weight of the hide be to that of the bulls live weight? What percent are the eatable organs (heart, liver, and kidney)? How much variation is there for meat breeds (Black Angus, Hereford) and milk breeds (Jersey, Holstein)?
