Is there a way to freeze squash? I have tried several different ways but the skin always stays hard and the rest turns to mush.

To freeze summer squash you'll want to choose young squash with tender skin. Wash and cut into 1/2 inch slices. Blanch in water for 3 minutes. This will cook and will help to remove water for the product. Cool promptly, drain and package leaving 1/2 inch head room. Seal and freeze. You can also prepare in a favorite sauté recipe and freeze that. Hope this helps.
