There are many choices for full sun perennials in Minnesota. Some of them require more or less water and/or different kinds of soil. It's always a good idea to start a new project like this with a soil test. Here is a link that will help you: Soil Testing Laboratory at the University of Minnesota.
We don't have a comprehensive list, but the following links may help you decide which plants to purchase. We would encourage you to consider "pollinator-friendly" plants - ones that produce flowers at different times of the season, ones that do not require insecticidal sprays, and ones that can provide food (leaves) and shelter for their caterpillars.
