Food nutrition question

Is there a chart, booklet, website, etc where I can compare flours and starches for nutritional makeup and substitutions? I need to make some foods and snacks that are grain free and as low starch as possible. Thank you for your help.

I am not an expert in special dietary needs so I asked my specialist for information. For nutrition information, the best bet is to go to the USDA Nutrient data base site.
