Food nutrition question
Is there a chart, booklet, website, etc where I can compare flours and starches for nutritional makeup and substitutions? I need to make some foods and snacks that are grain free and as low starch as possible. Thank you for your help.

Thank you for your question for eXtension.
I am not an expert in special dietary needs so I asked my specialist for information. For nutrition information, the best bet is to go to the USDA Nutrient data base site. You can search by different types of flour. http://ndb.nal.usda.gov/ This publication from Clemson might also be helpful: http://www.clemson.edu/extension/hgic/food/food_safety/handling/hgic3485.html
And you might try searching the eatright.org website to find a licensed dietician in your area to help you.
