We live in an area with lots of cedar trees and see the cedar apple rust at times on the trees. We want to plant and espalier apple trees. Which spur varieties are resistant to the cedar apple rust.

Why Spur varieties? I would recommend using the Penn State guide for Apple Varieties or WVU's listing of Apple Cultivar Susceptibility to the Cedar-apple Rust Fungus . They have a list of rust resistant varieties. Please see :
