See below for a link to a comprehensive vegetable dehydration bulletin that would likely meet your needs. It covers the preparation, pretreatment, drying and storage process. This bulletin is from Georgia and it gives directions for drying foods outside. Michigan climate is really too humid to dry foods outside so the only recommended way to dry foods in Michigan is via oven drying or electric dehydrator. It is recommended to dry vegetables to brittle state - where they would crack when you press down on them. This is because of their low acidity and risk if not dehydrated completely.http://nchfp.uga.edu/publications/uga/uga_dry_fruit.pdfPlease feel free to email me any other questions or contact me directly.Jennifer
