Illinois Retail Butcher Shop

Where can I find information on the legal obligations and regulatory licenses required to open a butcher shop in Illinois? We do not intend to slaughter live animals, but rather purchase whole animals from a local meat processor and butcher them in house - postmortem. Would we still fall under a meat processor category? Thanks in advance for any help!
