Mason Jar cakes

Asked March 2, 2014, 12:57 AM EST

I see service wives cooking and sealing cakes in mason jars. The discussion is how safe is it sealing a hot cake right out of the oven? I would like to do this for a church bake sale. Thank you, Susan

Hi Susan,
I am so glad you asked. What you want to do could be very dangerous and not recommended. Studies have shown that botulism toxin can grow in canned cakes. If these products are produced commercially they have undergone research to add ingredients and processing techniques to make them safe. There is no research done for the home preserver. Here is a link for a position paper that is from USDA Center For Food Preservation on the topic. nchfp.uga.edu/publications/uga/uga_can_breads.pdf
