What home scraps would make a radish grow taller? Ex: coffee, eggshells, banana peels...? What nutrients does a radish need? Why would the scraps you recommend be best(what's in them that radishes need)?

Selecting organic fertilizers for specific plant growth is problematic. We are not quite sure whether you are seeking 'taller' foliage or longer radishes. If you are seeking to have more foliage, you should select a nitrogen rich fertilizer, but higher levels of nitrogen fertilizer will result in smaller root development. If you are seeking to have more well developed roots, you should concentrate on potassium rich fertilizer.
Coffee grounds are high in nitrogen but are slightly acidic, so excessive coffee grounds could result in less foliage (acidity) and less root material. If you want to enhance root development using kitchen scraps, you could consider begin burying banana peels as well as potato, carrot, and other root vegetable peelings in the planting area now and allowing them to decompose over winter. Better yet, you should compost all of your kitchen scraps and incorporate the finished compost into the planting area.
You should contact your local extension office for more detailed, locally appropriate nutrient information.
