The general guideline stated in Training and Pruning Your Home Orchard is “Prune when all danger from fall or early winter freeze has passed, but before full bloom in spring.” (That publication includes full instructions with helpful line drawings. http://ir.library.oregonstate.edu/xmlui/bitstream/handle/1957/22166/pnw400.pdf)

And summer pruning can help you manage an overly vigorous tree. See “Apple trees benefit from proper pruning, spring and summer” http://extension.oregonstate.edu/gardening/node/954

If the apple tree requires rejuvenation and renovation, see “Pruning to Restore an Old, Neglected Apple Tree” http://ir.library.oregonstate.edu/xmlui/bitstream/handle/1957/12546/pruningrestoreoldneglectedappletree.pdf?sequence=1
