This is an interesting recipe and I am not sure you will like it canned. I would have to guess the processing time which is not a good idea. Just looking at it, it probably has enough acid with all the juices and vinegar added. You would have to cook it for a least 5 minutes and then process it in a boiling water bath for at least 15 minutes and I would suspect you would have a rather mushy end product.
There is a great mango Salsa recipe that has been tested for canning on the National Center for Food Preservation you might like to try. http://nchfp.uga.edu/. You will find salsa instructions under canning, They have a variety of safe recipes that have been tested for canning.
You could safely freeze the salsa you are asking about and not have to worry about safety.
