What temperature is needed to deactivate toxin in kidney beans?
What is the time and temperature needed to deactivate the toxin in raw kidney beans? I've heard that a crock pot might not be high enough, even though the beans would cook a long time.

Enzymes are destroyed at about 120 degrees F. in wet heat so your crock pot should adequately reach that temperature when you are cooking kidney beans.
