convertring hot water bath times to pressure cooker times

Asked September 25, 2013, 10:28 PM EDT

Can you pressure cook receipes that call for hot water bath and how do I figure the processing time? Also, receipe for apple pie, hot water bath, 25 minutes for pints, if I used quarts would the time remain the same?

Some products have been tested for pressure canner times as well as boiling water bath. These include many fruits. You can see which ones if you check specific fruits on this website. http://nchfp.uga.edu/
We don't recommend trying to calculate what the pressure canning time would be based on boiling water canning times. There may be reasons not to pressure can some things like the quality or different heat transfer patterns under pressure.

Pints and quarts of apple pie filling are to be processed for 25 minutes.
