Canning Roasted Tomatoes with Onions & Garlic

What is the correct time/psi to Pressure Can tomatoes with onions and garlic? If I roast the veggies, does that affect the time/psi? How much added acid is required for pint & quart, if any?

We do not have laboratory tested recipes for canning roasted tomatoes with onion and garlic. If you were to do it you would need to pressure process them for the onion time and acidify the tomatoes with 1T bottled lemon juice per pint and 2 T. per quart. I would also recommend adding water or tomato juice liquid so the product is not too dense for adequate heat penetration.

Processing time is 40 minutes in a pressure canner 10# pressure for weighted gauge canner and 11# pressure for dial gauge canners.
