salsa verde

Asked September 13, 2013, 1:24 PM EDT

Good morning,

Is it possible to home can tomatillo salsa verde? I've seen it in jars at the grocery store, but can't find any home-canned recipes. I have a tomatillo bonanza in my garden, but I'm not sure what to do with all of them.

Thanks for your help

Yes, you may safely substitute tomatillos in place of regular tomatoes for salsa. We recommend that you follow tested salsa recipes, available at www.uga.edu/nchfp
There is also a Tangy Tomatillo Relish thast you may wish to try: http://nchfp.uga.edu/publications/nchfp/factsheets/tomato_relish.pdf
Hope that helps. Thanks for using eXtension.

Thank you for your answer to my question, Mary. Very helpful indeed.

You are most welcome. For additional recipes, try the mexican tomato sauce or hot chili salsa recipe in our CSU fact sheet:

You can use tomatillos in these recipes.
