Reducing sugar in a brine
We recently canned brussel sprouts and the result was too sweet for our taste. Can we lower the amount of sugar in the recipe and still can safely?

Yes it can be done but have to be sure if that (amount of sugar used) is a critical factor in the canning process, in other words: Is the amount of sugar added important in order to process the product in the canning process and make it safe? If it is, then the canning time and temperature will need to be readjusted. Is the amount of sugar used specified in the canning recipe? If yes, then a new recipe with lower sugar will be needed.
