safety of fruit preserved in 30 proof alcohol
I'd like to try preserving peaches and pears in peach schnapps (since I don't like brandy), but it's only 30 proof. Most recipies for alochol preserved fruit call for 80 proof alcohol. Will my concoction be safe? If not, and if I keep it in the fridge, will that be safe? I'd like to keep it a few months... Thanks very much, Iyana Stadler
