Can red, yellow or orange peppers be used in peach apple salsa?

Asked September 5, 2013, 3:27 PM EDT

The recipe calls for green bell peppers. Can the sweet red, yellow or orange peppers be used instead? Is the canning time the same?

Hello and thank you for submitting your question to Ask an Expert!

I am assuming you are referring to the recipe on the National Center for Home Food Preservation website: http://nchfp.uga.edu/how/can_salsa/peach_apple_salsa.html

Yes, you can substitute the variety of peppers, as long as you do not change the quantities specified in the recipe. This may affect the flavor and heat of the salsa, but should not have an impact on the safety of the product as all peppers have a similar pH or acidity level. As always, follow the recipe carefully when measuring and be sure to add the acid specified (in this case vinegar) and process according to the instructions.

Happy canning!
