how and when to prune plum and cherry trees

I'd like photos or drawings of the proper way to prune plum trees and the proper time, ditto on cherry trees, the trees were planted las tyear and fruited a bit this summer, and are growing like crazy.

All fruit trees should be pruned in late February. We normally don't grow a lot of cherries in Arkansas, but I would treat them like the plum and prune them to a manageable picking height.
