how do i know it's time to harvest potatoes

Thank you for your question about potato harvesting. Exactly when to harvest will depend on what variety you are growing, as well as your growing conditions, but in general, they are harvested about 2 weeks after the vines naturally die down or about 10 days after you have determined by test-digging that the potatoes are the size that you want them, and you have cut down and removed the vines.
