What do you do with grape hyacinths after they flower? After I take off the dead blooms, the grass like leaves don't seem to die back and just lie around looking messy. Can I just cut them back?

The foliage of flowering bulbs are best left as long as they are green. During this time, they are photosynthesizing and storing energy in the bulb for next year's flowers. Typically, they are cut back after yellowing.
