Marketable but viable crops for small (1-3 acre) operation near 77872

Hi, I'm considering a small vineyard or vegetable/fruit garden as a hobby with the potential to grow into commercial operation. Looking for ideas on crop selection in terms of both viability to grow (in 77872) and market potential.
