what can I plant that deer will not eat

Look at the list on the following to see if that will help. There may be others on other extension sites. You can minimize the affect of deer eating plants by providing physical barriers and repellents.

Something to think about

A few years ago, deer were thought not to eat evergreens such as white pine. There was a bad winter in my area of the Finger Lakes and the deer were desperate. They started eating the needles. They now have no problem with eating pine needles in winter.

The take home here is that animals adapt when the environment changes.
