The USDA-NOP (United States Dept of Agriculture - National Organic Program) maintains the National List of Allowed and Prohibited Substances, which specifies materials that may and may not be used in certified organic production.

The general rule of thumb is that natural substances are allowed unless expressly
prohibited and included on the list. On the other hand, synthetic substances are prohibited for use unless they are specifically listed as allowed. Allowed materials often must meet a number of provisions before their use is warranted.
