Cooperative Extension was originally created as a way to extend the reach of land-grant colleges and universities, and in particular, provide farmers with the knowledge necessary to improve crop and animal production. Over the years, Extension has evolved to provide knowledge and information in many different topic areas, such as family and consumer resources, forestry, community and economic development, and youth development.

This "non-agricultural" Extension, as you called it, is still focused on translating the research and expertise available from the nation's land-grant institutions in to a format that is useful and valuable to the public.
