Drying Potatoes

All my books say I must peel potatoes before drying. Because the peel has the "goodies", can I just wash them well and dry them with the peels on?

I think most people prefer to peel them first because the skins tend to get tough when they are dried. It is not a safety issue as long as you scrub the skins well to remove all the dirt. Be sure you blanch your potatoes (steam blanch 5-6 )minutes) and then wash them to remove the starch before you dry them. If you don't the potatoes could turn black when they are drying..
