Though it’s sad to lose an old tree the prospect of watching a young tree grow is very nice. Imagine 200 years from now. Wow.
I cannot recommend removal service but your city may have suggestions.
As for replacement I would go for another oak. Depending on the location, soil, and weather exposure you may want to have the stump ground and them plant on top of it.

Get the soil tested to see what condition it is after 200 years. It may need some enhancements. Those old roots will decay over time.
