Can using Monk Fruit with making plum jam ok for long term storage?

Monk sugar is heat stable so can be used in making low sugar jams however I would suggest you use a low/no sugar pectin to make your jam and sweeten to taste with Monk sugar.  IT can be processed and will be shelf stable as long as it is sealed but needs to be refrigerated after opening to prevent molding.  It doesn't last too long after opening so make in small jars.  

Pomona Pectin is a good low/no sugar pectin.  Ball and Mrs. Wages also make low/new sugar pectin products you can use.
