Best method for keeping Fresh Eggplant

Hi- eggplant does not store well. Eggplant fresh from the garden can be stored at room temperature for 1-2 days or in the crisper drawer of your refrigerator for 3-4 days.

Varieties with relatively thick skins will have a longer storage life.
