Prep ahead for canning #879414

Whould it be okay to prep and refrigerated my vegetables, including blanching and cutting the corn, for making corn relish the next day?

Hi Michelle,

It is perfectly acceptable to prepare the corn, chop the veggies ahead of time and refrigerate them over night. Then make the corn relish the next day.

As you set up your kitchen to make the relish, you may want to take the chopped veggies out of the refrigerator so they can warm up a little before you start cooking them, otherwise it may take longer to bring the relish to a boil.
