Fermenting pickles in foodgrade plastic bucket with airlock #878821

Recipes for fermenting cucumber pickles say to submerge cucumber in brine using weights, and to cover the crock or food grade container with a towel while fermenting. Can I use a foodgrade plastic bucket with an airlock instead of covering a crock with a towel?

Thanks for reaching out to the UNH Extension Infoline. Yes, you can absolutely use a lid with an airlock. If it makes a good seal it will help prevent mold from forming so try to use a lid that is airtight with a gasket. I would still make sure the vegetables are submerged as much as possible with weights or a brine-filled plastic bag.
